Frightful Fairy Cakes
I really enjoy creating these little horrors and Miniminx loves it too. We use a big mixing bowl which was my Mum’s so it brings back lots of happy memories for me too.
This recipe makes a whopping 18 sugar rushes cakes so make sure you have enough cake cases and stick the oven on at 190 degrees before you start. Oh, and don’t forget to raid the sweet shop for Lovehearts, Smarties, Dolly mixture and Jelly Tots and any other glow in the dark goodies.
Ingredients
250g organic brown caster sugar
250g organic unsalted butter
250g self raising flour
4 large organic eggs
Milk (add tablespoon at the end of mixing)
Plus vanilla essence, strawberry flavouring, pink and blue food colouring (those little pots in the homebaking aisle)
2 large tablespoons of cocoa powder
Topping
125g organic unsalted butter
200g icing sugar
Food colouring (red and blue)
Vanilla essence
Start as you would with a normal cake mix; add the sugar and butter in a bowl and smooth in together, then mix in the eggs and finally fold in the flour. Take two bowls and split out the mixture so you have three lots. Add the vanilla essence (half a teaspoon) and cocoa to one and mix in. Add strawberry flavouring and pink colouring to the second, then vanilla essence and blue colouring to the third. Fill the 18 cake cases and cook for 12-15 minutes.
Remove and cool the cakes before decorating.
Mix up the icing and soft butter and split in half. To one add vanilla flavouring and blue food colouring and the other the red food colour. Make sure you put the blue icing on the pink cakes and the red icing on the blue cakes to create that eye popping acid house feel. Best to add the topping using a knife and be generous because you want the sweets will stay on easily. Then go crazy with the sweeties, using as many colours as possible.
Warning: You should hide these from adults and children alike as they disappear pretty quickly once they’ve been spotted, and as all we Mums say, ‘Eat yer greens before yer cake!
